This changes the color of text.
The tag needs a starting parameter of what color you want the text to be. You can find a list of supported colors here or you can put in a color hex code (a good color picker is found here):
[color=red]Some Text[/color]
[color=FF0000]Some Text[/color]
[color=#FF0000]Some Text[/color]
