Make cancelled reservations a status

Requested by a client - currently, when we cancel a reservation it simply destroys the record in our database; we should make "cancelled" a status and treat it like missed reservations, with the option to retain them for a fixed amount of time so they can be seen / reviewed. Additionally, we should add an optional notification message for both the patron and/or (maybe) the admin.
